Our Chef
Born and raised in British Columbia, Canada, Chef Derrek Leong’s journey has always revolved around food and family. With over 20 years in the food and beverage industry, he worked his way up from kitchens to becoming an international chef, gaining experience across the globe.
His time in Chongqing, China, was especially transformative, sparking a deep passion for the region’s bold flavors and the fiery heat of Sichuan cuisine. Family has been the driving force behind both his career and his decision to launch his own business in Victoria, BC. Inspired by his Chinese heritage—rooted in a small village in Guangdong Province—Derrek is dedicated to honoring tradition while pushing culinary boundaries.
